Early Career

Foulkes represented the Canterbury cricket team at age-group and provincial levels. He made his under-17 cricket debut for Canterbury U17s on 17 January 2019 in the 2018/19 Under-17 National Tournament. In that match, he was dismissed for just 10 runs. He also played five matches for St. Andrew's College in the 2019 Gillette Cup, a secondary school cricket competition.

On 2 December 2019, he scored 112 runs off 120 balls and took two wickets, helping his team to victory against Rosmini College. He was St. Andrew's College's best player in the tournament. He scored a total of 267 runs and took nine wickets. This contributed to his team's first Gillette Cup title.

He made his U19 cricket debut for Canterbury U19s on 17 December 2020 in the 2020/21 National Under-19 Tournament. He was the highest wicket-taker for the Canterbury team in the tournament, taking 8 wickets and scoring 145 runs. His overall performance helped Canterbury finish top of the table.

In October 2021, he was called up to the Canterbury A cricket team for the 2021/22 National Provincial A Matches. He played six matches in the tournament and scored 177 runs, including a 50.

Professional Cricket

He made his List A debut for Canterbury on 20 February 2022 in the 2021/22 Ford Trophy. He made his first-class debut for Canterbury on 3 March 2022 against Auckland in the 2021/22 Plunket Shield season.

In June 2022, Foulkes was given his first professional contract by Canterbury ahead of the 2022/23 season. In August 2022, he was recruited by Wynnum-Manly for the inaugural season of the KFC T20 Max, a first-class T20 competition for junior players organized by Queensland Cricket. On 30 August 2022, he scored an unbeaten 102 runs off 52 balls and led his team to a one-wicket victory in the thrilling match against Sandgate-Redcliffe.

On 8 January 2023, he made his Twenty20 debut for the Canterbury Kings in the 2022/23 Men's Super Smash against the Auckland Aces. In his T20 debut match, he took one wicket and conceded 26 runs in four overs. With twelve wickets in ten matches, he was the Canterbury Kings' leading wicket-taker and led his team to the final.

International Career

Foulkes was selected in April 2024 as a replacement for the injured Adam Milne for the Black Caps' tour of Pakistan, where he played in two T20Is. Foulkes was then selected for the Sri Lanka tour in November of the same year. He participated in two more T20 internationals before making his ODI debut in the third ODI. He was not required with either bat or ball, as the match was abandoned midway through the first innings due to rain. Foulkes was then selected for Sri Lanka's limited-overs tour of New Zealand in December 2024.
